Recipe: Coulotte Steak with Red Wine Reduction

Ingredients:

  • 2 Coulotte steaks from HM Cattle Company
  • 1/2 cup red wine
  • 1/4 cup beef broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper

Instructions:

  1. Preheat the oven to 400°F.
  2. Season the coulotte steaks with salt and pepper.
  3. Heat a cast iron skillet over high heat and sear the steaks for 2-3 minutes on each side until nicely browned.
  4. Transfer the skillet to the oven and roast the steaks for 10-12 minutes, or until desired doneness is reached.
  5. Remove the steaks from the skillet and let them rest for 5 minutes.
  6. In the same skillet, reduce the heat to medium and add the garlic and thyme. Cook for 1-2 minutes until fragrant.
