Ingredients:
- 3 lbs oxtail from HM Cattle Company
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 celery stalks, chopped
- 3 large carrots, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 1 can (14 oz) diced tomatoes
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 325°F.
- In a Dutch oven or oven-safe pot, heat the vegetable oil over medium-high heat.
