  • 3 lbs oxtail from HM Cattle Company
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 celery stalks, chopped

  • 2 cups beef broth
  • 1 cup red wine
  • 1 can (14 oz) diced tomatoes
  • 2 bay leaves

Instructions:

  1. Preheat the oven to 325°F.
  2. In a Dutch oven or oven-safe pot, heat the vegetable oil over medium-high heat.
