Ingredients:
- 1 (3-4 lbs) HM Cattle Company chuck roast
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 325°F.
- Heat olive oil in a Dutch oven over medium-high heat.
- Season the chuck roast generously with salt and pepper.
- Brown the roast on all sides in the Dutch oven.
- Remove the roast from the Dutch oven and set it aside.
- In the same Dutch oven, add onion and garlic and sauté until softened.
- Add red wine, beef broth, tomato paste, Worcestershire sauce, and bay leaves to the Dutch oven.
- Stir well to combine.
- Place the roast back in the Dutch oven and spoon some of the sauce over it.
