Ingredients:
- 3-4 lb HM Cattle Company Eye of Round Roast
- 3 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 2 tbsp olive oil
- Salt and pepper
- 1 cup beef broth
- 1/4 cup red wine
Instructions:
- Preheat the oven to 425°F.
- In a small bowl, mix together the garlic, rosemary, thyme, olive oil, salt, and pepper to make a paste.
- Rub the paste all over the Eye of Round Roast, making sure to cover the entire surface.
- Place the roast on a roasting pan and roast in the preheated oven for 20 minutes.
- Reduce the oven temperature to 350°F and continue roasting until the internal temperature of the roast reaches 135°F for medium-rare, or 145°F for medium, about 1 hour.
